I was visiting my friend Rosa when she was prepping this. I couldn't remember everything she did, so I winged it, Gringo Style <3
1 lb ground beef
1 small onion
2 package taco seasoning
1 can diced tomatoes
1 can corn
8 oz shredded cheese
1 box Jiffy cornbread (requires 1 egg and 1/3 cup milk)
Brown beef and onion in skillet, add seasoning, tomatoes and juice from corn. (I used plain diced tomatoes and fiesta corn. you could change it up and use plain corn and diced tomatoes with other yumyums in it) Spread in a casserole dish. Add a layer of corn and 3/4 the amount of cheese. Mix the cornbread according to directions and spread evenly. Bake at 350 for 20 minutes or until bread is golden brown. Sprinkle remaining cheese and return to oven til melted. Serve and enjoy!
